Veggie-Packed Sloppy Joes

Serves 6

Ingredients

  • 1 lb. lean ground turkey
  • 2/3 cup chopped white onion
  • ½ cup chopped green bell pepper
  • ½ cup chopped red bell pepper
  • ½ cup chopped zucchini
  • 1 tsp. cumin
  • ½ tsp. garlic salt
  • ½ tsp black pepper
  • 1 can (10 ¾ oz.) reduced-sodium condensed tomato soup
  • 1/3 cup ketchup
  • ¼ cup barbecue sauce
  • 2 tbsp. spicy mustard
  • 6 whole wheat hamburger buns

Preparation

  1. 1. Spray a large skillet with olive oil place over medium-high heat. Add the turkey, onion, bell peppers, zucchini, cumin, garlic salt and black pepper. Cook until turkey is no longer pink.
  2. 2. Stir in the soup, ketchup, barbecue sauce and mustard. Transfer to a slow cooker and cook on low for 4 hours. Serve on whole wheat buns.
