2 cups packed Medjool dates, pitted
2 cups cashews
1 tsp. cinnamon
1 tsp. pure vanilla extract
Pinch of sea salt


  • Place ingredients in a large food processor and pulse until combined into a paste. Depending on the size of your food processor, you may have to work in batches.
  • Empty the paste out onto a plate and start rolling into 1-inch balls. Enjoy right away or freeze for later.
