1 ripe banana, peeled and mashed
½ cup oatmeal
2 tbsp. chocolate chips
1 tbsp. chopped walnuts (optional)
1. Spray a microwave-safe bowl or ramekin with nonstick spray. Combine all ingredients and press down to form a flat cookie.
2. Microwave on high for 60 to 90 seconds, until the center of the cookie is set. Allow to cool and enjoy!
3. Customize these cookies for your family – other ideas include: raisins, dried cranberries, sliced almonds, shredded coconut, a scoop of peanut butter and white chocolate chips.
